According to Sotto, the idea “came out of a conversation I was having with an employee who was complaining that the park’s food was too ‘Americanized'”.

The restaurant received worldwide acclaim when it opened in 1993 and was awarded the James Beard Foundation Award for best new restaurant in 2015.
